1/2 c diced apricots - chopped 1 c orange juice 1/2 c applesauce 1/2 c vanilla low-fat yogurt 1/8 t ground cinnamon dash ground ginger
Combine apricots and orange juice in a small nonaluminum saucepan. Bring to a boil over medium heat; cook 15 minutes or until apricots are soft and liquid is absorbed, stirring frequently. Remove from heat; cover and cool. Place apricot mixture and remaining ingredients in a food processor; process until smooth. Place in a small bowl; cover and chill. Serve with assorted fresh fruit.
Nutritional information: 306 calories, 2 g fat, 8 g protein, 67 g carbohydrates, 6 mg cholesterol, 81 mg sodium, 2 g fiber.
