Basil pesto just says "summer." Unlike traditional recipes, this one has no nuts, and is garlicky and spicy-adjust amounts to suit your taste.
Makes about 3/4 cup
Blend in a Food Processor: 6 large garlic cloves 2 cups fresh basil leaves, packed 1/2 cup Parmesan, grated 1/4 cup extra-virgin olive oil 1/2 t. kosher salt 1/2 t. crushed red pepper flakes
Blend all ingredients in a food processor fitted with a steel blade. Use immediately or transfer to a container and store, covered, with plastic pressed on the surface to prevent darkening.
Blend pesto until a thick, paste-like consistency. If necessary, thin out with a little fresh lemon juice.
