ild Mushroom Rice Pilaf
Prep Time: 15 min. Cook Time: 50 min.
1 tbsp. olive oil 1 lb. assorted fresh wild mushrooms, coarsely chopped* 2 medium shallots, finely chopped 2 cloves garlic, minced 1 tsp. dried thyme leaves, crushed 1/2 cup uncooked wild rice 2 cans (14 oz. each) Swanson(R) Beef Broth or Lower Sodium Beef Broth 1 cup uncooked regular long-grain white rice 2 tbsp. chopped fresh parsley
HEAT oil in large nonstick skillet. Add mushrooms, shallots, garlic and thyme and cook until tender.
ADD wild rice and broth. Heat to a boil. Cover and cook over low heat 25 min. Add white rice. Cover and cook 20 min. or until done. Stir in parsley. Serves 8.
*Or use dried wild mushrooms instead of fresh mushrooms. Cover dried mushrooms with hot Swanson(R) Broth. Let stand 15 min. Pour off broth and reserve for another use. Chop mushrooms. Proceed as above.
