Low-Fat Sauteed Apples in Creamy Sauce
1 Tbsp. unsalted butter 4 tart apples, cored, peeled and sliced 1/2 tsp. cinnamon 3 Tbsp. brown sugar, firmly packed 3/4 cup evaporated skim milk 1/4 cup apricot preserves
Melt butter in a heavy nonstick skillet over medium high heat. Saute apples with cinnamon 4-5 minutes. Add brown sugar and continue to saute until apples begin to dry. Add evaporated skim milk and preserves and simmer until sauce begins to thicken. Serve warm. Makes 4 servings.
