Preheat oven to 350°F. And have ready a 8x8" baking dish or a 9" pie plate.
Stir together:
1 1/2 cups graham cracker crumbs 1/4 cup sugar 6 tbsp. unsalted butter, melted.
Peel and cut into 1/2" slices: 4 Firm ripe bananas.
In a med. saucepan, bring to a simmer over medium heat: 1 1/2 cups milk (Reserve 1/2 tsp. vanilla extract for later)
While milk heats, beat in a med. bowl until thick and pale yellow:
1 large egg 1/4 cup sugar 1 tbsp. all purpose flour 1 tbsp. cornstarch 1/4 tsp. salt
Gradually whisk half the milk into the egg mixture, then whisk this mixture gradually into the milk remaining inthe pan. Cook, whisking constantly and scraping the bottom and sides of the pan, over meduim heat until the center bubbles and the mixture has thickened,
Remove from heat and stir for 1 min. to cool.
Add the vanilla extract
Fold bananas into the hot custard. Gently press half the crumb mixture over the bottom of the baking dish. Spoon the banana mixture evenly over the crumbs and cover with the remaining crumb mixture.
Bake until the top has browned and the filling is warm, 25 to 30 min.
Let cool on rack for 20 min before serving. To serve , spoon into bowls and serve with vanilla ice cream!
