This is my favorite strawberry shortcake When this cake bakes, it changes sides. The top goes to the bottowm and the bottom comes to the top.
1 C. miniature marshmallows 2 C. (two 10 oz. pkg.) frozen sliced strawberries in syrup, completely thawed 1 pkg. strawberry flavored gelatin 2 1/2 C. Pillsbury's Best all Purpose Flour (If you use Pillsbury's Best Self-Rising flour, omit baking powder and salt.) 1 1/2 C. sugar 1/2 C. solid shortening 3 tsp. baking powder 1/2 tsp. salt 1 C milk 1 tsp. vanilla 3 eggs
Generously grease bottom only of a 13 x 9-inch baking pan; Sprinkle marshmallows evenly over bottom of pan. Thoroughly combine completely thawed strawberries and syrup with dry gelatin; set aside. (No need to sift flour; measure by ightly spooning into cup and leveling off.) In large mixer bowl, combine remaining ingredients. Blend at low speed until moistened; beat 3 minutes at medium speed, scraping side of bowl occasionally. Pour batter evenly over marshmallows in prepared pan. Spoon strawberry mixture evenly over batter. Bake at 350 degrees for 45 - 50 minutes until golden brown and toothpick inserted in center comes out clean. Serve warm or cool with ice cream or whipped cream.
I imagine this is a Pillsbury Recipe. and it is delicious and easy to bake.
