4 to 5 peaches, split and pitted, cut into 1/2-inch slices 2 individual-size dough crusts, made from scratch or refrigerated dough 1/4 cup melted butter 1/4 teaspoon cinnamon sugar 1/2 cup mascarpone 6 fresh mint leaves Preheat grill. Place peaches on grill, cut side down; grill 2 to 3 minutes. Remove and cool enough to handle. Brush both sides of dough crusts with butter; place on grill for 2 to 3 minutes. Remove, brush again with butter and grill on second side till fully cooked, about 5 to 7 minutes. Brush again with butter and sprinkle heavily with cinnamon sugar on both sides. Spread with mascarpone and top with grilled peaches. Garnish with mint leaves. Servings: 4.
