1/4 cup quick cooking tapioca 1/2 cup sugar 4 cups milk 2 eggs, lightly beaten 1 Tbsp. vanilla extract
Directions: Combine the first 3 ingredients in a bowl. Cover and microwave 10 minutes on high, or until steaming but not boiling. Stir and microwave another 7 minutes on high, uncovered, or until slightly thickened. Beat eggs into tapioca mixture, whisking briskly. Microwave 1 minute on high, uncovered. Stir in vanilla. Cool to room temperature or serve chilled. This recipe serves 4 people.
