Grilled Steaks with Blue Cheese + Walnut Relish
6 ounces crumbled Roquefort cheese 3 tbsp. minced or powdered walnuts 3 tbsp. chopped green onions 2 tsp. dried parsley or 2 tbsp. chopped fresh 1 1/2 tsp. grated lemon rind 2 1/2 to 3 lbs. beef steak, cut 1/2 - 3/4" thick 1 1/2 tsp. dried thyme 2 1/4 tsp. salt 2 1/4 tsp. freshly ground black pepper
Place cheese, walnuts, onion, parsley and rind in a bowl. Mix well and set aside. Place the meat on a work surface. Combine the thyme, salt and pepper in small bowl. Mix well. Rub both sides of meat with the salt mixture and set aside. Coat cooking grid with cooking spray and preheat grill Arrange grid 5" from heat. Grill steaks until medium/rare, about 3 - 5 minutes per side. Remove and place on a warm serving plate. Cut steaks into 6 portions. Top each with a generous tablespoon or more of the relish. Makes 6 servings.

Grilled Rio Grande Steak
4 sirloin strip steaks, 1" thick 1 1/2 tbsp. dark chili powder 1 1/2 tbsp. ground cumin 1 tsp. ground coriander 1/2 tsp. ground cayenne pepper 1 large red onion, cut into 4 thick slices extra virgin olive oil for coating
Let steaks set for a few minutes to take the chill off. Preheat a grill pan or indoor electric grill to high heat. Combine chili powder, cumin, coriander and cayenne to make the spice rub. Rub spices into steaks. Coat the sliced red onion with a drizzling of oil. Season with salt and pepper. Cook the steaks and onion slices 5 minutes on each side. Remove from heat and let stand for 5 minutes for juices to redistribute. Season steaks with salt. Top with separated rings of the grilled onions. Makes 4 servings.

Cracked Corn + Cheese Squares
1 8 1/2oz. pkg. corn muffin mix 1/3 lb. Monterey Jack cheese for mild ...or Pepper Jack cheese for zesty, ...diced into 1/4 inch pieces 1/2 c. frozen corn kernels 1 thinly sliced scallion
Preheat oven to 400. Grease an 8 inch square baking dish with softened butter. Make the muffin mix to package directions. Stir the cheese, corn, and scallions into the muffin batter. Pour batter into the baking dish. Bake for 15 -18 minutes, until golden. Makes 4 plus servings.
