For 75 Servings:
2/3 cup plus 2 Tbs. unsalted butter 19 lbs. broccoli florets 1 gallon plus 3 cups recipe-ready crushed tomatoes Melt butter in a heavy saucepan over medium heat. Sauté broccoli florets 2-3 minutes. Add tomatoes and salt and pepper to taste. Cover and simmer 3-4 minutes or until broccoli is tender.
Per serving: calories 61, fat 2.4g, 30% calories from fat, cholesterol 5mg, protein 4.0g, carbohydrates 8.5g, fiber 3.9g, sugar 3.6g, sodium 120mg, diet points 1.1.
