For 75 Servings:
2-1/2 cups brown sugar, packed 1-1/4 cups unsalted butter, softened 5 cups buttermilk baking mix 2-1/2 cups chopped walnuts 2-1/2 lbs. cream cheese, softened 1-1/4 cups granulated sugar 1/4 cup plus 1 Tbs. lemon juice 3 Tbs. plus 1 tsp. milk 2-1/2 tsp. vanilla extract 5 eggs Preheat oven to 350°F. Combine brown sugar and butter in a bowl and mix until well blended. Stir in baking mix and walnuts until mixture is crumbly. Reserve 5 cups. Press remaining mixture in a 9 inch square baking pan with fingers floured with baking mix. Bake 12 minutes. Combine cream cheese and granulated sugar in a bowl and mix well. Beat in remaining ingredients until smooth. Spread cream cheese mixture over layer in pan. Sprinkle with reserved crumbly mixture. Bake about 25 minutes, until center is firm. Cool and cut into bars.
