Pepper Jelly
1 1/2 c. diced green bell pepper 1 1/2 c. distilled white vinegar 6 1/2 c. white granulated sugar 1 packet fruit pectin or 3oz. liquid
Using a large, stainless steel saucepan, combine pepper, vinegar, and sugar and bring to a boil. Cook for 6 minutes, stirring constantly. Stir in pectin, and continue to boil for 3 more minutes, stirring constantly. Skim off any foam with a metal spoon, and remove pan from heat. Pour into hot clean jars, leaving a 1/2" space at the top. Hot water bath for 5 minutes. Makes 3 1/2 cups.
