Cantaloupe Butter 1 c. chopped cantaloupe with the rind removed 1 tsp. water 1/2 c. room temperature butter 2 tbsp. lime juice 1 tsp. finely grated lime zest In a small saucepan, simmer the fruit with water until very tender. Cool to room temperature. Place all ingredients in a blender/food processor and blend until smooth. Use with grilled chicken or fish. Also good on pancakes.
