Makes 4 Servings
Ingredients: 3 Tablespoons salsa; 1/3 cuplow fat mayonnaise; 2 Tablespoons lime juice; 1 Tablespoon Mrs. Dash Mesquite Seasoning; 2 cups cooked and cubed potatoes; 2 cups cooked left-over turkey; 1 medium sweet red pepper, chopped; 1 head lettuce
Instructions: In a large bowl combine salsa, mayonnaise, lime juice, and Mrs. Dash Mesquite seasoning, mix well. Fold in turkey, potatoes and pepper. Chill for 1 hour. Lay lettuce leaves on a large platter and fill with salad. Serve on a holiday buffet. Potassium per serving: 897mg Use a zester and remove strips of lime zest before juicing. Use the lime zest as a garnish on your salad.
