:-*hi everybody, I need a recipe for roasted pecans. I have a freezer full of pecans and I want a recipe that roasts or fix them like the ones you get in a can. I will also take any recipes that uses a lot of pecans. The fall is coming and our trees will soon be dropping their nuts and I still have a lot in our freezer. thanks a lot

These are delicious and addicting!
TOASTED PECAN CLUSTERS
3 Tbsp. butter 3 cups pecan pieces 12 oz. chocolate or white chocolate candy coating
Preheat oven to 300 degrees.
Melt butter in a 15x10 pan. Spread pecan pieces evenly in pan with melted butter. Bake for 30 minutes, stirring every 10 minutes.
Melt candy coating over low heat. Remove from heat and cool 2 minutes. Stir in toasted pecans. Drop rounded teaspoons onto wax paper.
Cool in the refrigerator for about 15 minutes or until set. The pecans can then be kept at room temperature.

Pecan Delights
2 1/4 cups packed brown sugar 1 cup butter (no substitutes) 1 cup light corn syrup 1/8 tsp salt 1 can sweetened condensed milk (14 ozs.) 1 tsp vanilla extract 1 1/2 lbs. whole pecans 1 cup semisweet chocolate chips (6 ozs.) 1 cup milk chocolate chips (6 ozs.) 2 Tbsps shortening
In a large saucepan, combine the first four ingredients. Cook over medium heat until sugar is dissolved. Gradually add milk and mix well. Continue cooking until candy thermometer reads 248° (firm-ball stage). Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoons onto a greased or parchment-lined baking sheet. Chill until firm. Melt chocolate chips and the shortening in a microwave-safe bowl or double boiler. Drizzle over each cluster. Cool. Yield: 4 dozen Note: It is recommended to test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test.
