Dried Fruit and Soda Bread
3 c. flour 1 1/3 c. chopped dried mixed fruit bits 1 c. quick-cooking oats 1/3 c. sugar 2 tsp. baking soda 1 tsp. salt 1 beaten egg 1/4 c. melted unsalted butter or margarine 1 1/3 c. buttermilk
Combine flour, fruit, oats, sugar, baking soda and salt in a large bowl. Make well in the center. In a small bowl, beat together egg, butter, and buttermilk. Add to well and stir just until dry ingredients are moistened. Do not over stir. Mixture should be lumpy. Turn dough into greased 2 quart oval baking dish. Bake in a 400 degree oven for 30 minutes or until golden brown and the loaf sounds hollow when tapped with finger. Serve immediately or cool completely. Store at room temperature in a tightly sealed container until ready to serve. Can be stored up to 1 week .
