Ham and Red Eye Gravy Ham Milk Strong Black Coffee Black Pepper Hot Biscuits or Grits
Slice ham, preferably with the bone in, into 1/4 inch strips or steaks. Soak in milk overnight.
Put just enough ham fat into a skillet to keep the ham from sticking, have skillet hot.
Slowly brown the ham evenly on both sides. When done, remove to hot platter.
For the gravy, add 2 cups of strong black coffee to the ham drippings in the skillet and sprinkle it with a bit of black pepper and let it come to a boil. Stir well and serve piping hot. Delicious over hot biscuits or grits.
