Old Fashioned Green Beans 2 lb. fresh green beans 1/4 lb salt pork or fat back 1 sm. onion, chopped 3 tbsp. bacon drippings 1/4 tsp of baking soda 1/2 tsp vinegar 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. black pepper 1 1/2 c. boiling water to boil salt pork in. (Not needed with fat back.) 6 or 8 new potatoes, soaked in water with a pinch of soda, then brushed to remove skins Cut salt pork in half and then score the fat side every 1/2 inch down to the rind. Boil salt pork in water for 15 minutes. Pour off water and foam. (If you are using fat back you can skip this step.) Add green beans and water to cover green beans. Bring to a boil and add all the other ingredients and cook on medium low for about 1 1/2 hours. Add new potatoes and cook for 30 minutes more. Keep pot covered all throughout the cooking process.
