Pasta Primavera with Italian Sausage
12 oz. dry linguini 2 tsp. olive oil 8 oz. mild Italian sausage links, casings removed 1/2 cup chopped onion 1 large clove garlic, finely chopped 1 cup sliced zucchini 1 can (14.5 oz.) Diced Tomatoes with Italian Herbs 1 can (6 oz.)Tomato Paste 1/2 cup sliced ripe olives 1/4 cup dry red wine Chopped fresh basil Shaved or grated Parmesan cheese
Cook pasta according to package directions; drain and keep warm. Heat oil in large skillet over medium-high heat. Add sausage; cook 5 to 8 minutes or until no longer pink; remove and set aside. Add onion and garlic; cook 2 minutes. Add zucchini; cook 2 minutes. Stir in undrained tomatoes, tomato paste, 2/3 cup water, olives, wine and cooked sausage; cook 5 to 7 minutes. Toss pasta with sauce in large bowl. Sprinkle with basil and cheese.
