Italian Pasta
Makes: 4 servings
2 tablespoons vegetable stock 1 red pepper, chopped 1 yellow pepper, chopped 1 green pepper, chopped 2 small zucchini, sliced 1/2 onion, chopped 3 tablespoons garlic, minced 1 pound (can) whole tomatoes in sauce 1 cup sun-dried tomatoes (not packed in oil), chopped 2 tablespoons oregano, chopped 2 tablespoons basil, chopped 10 ounces of your favorite pasta
Combine all the ingredients except the pasta in a large skillet. Stir, cover, and cook over medium-low heat for 15-20 minutes. Cook pasta according to the package directions. Drain well and serve with sauce. Nutritional Information:
