Pasta With Spicy Pepperoni and Mushroom Sauce
12 oz. fresh pasta or 8 oz. dried pasta
1 tablespoon oil
1/4 lb. pepperoni, skin removed and thinly sliced
1/2 lb. fresh mushrooms, thinly sliced
4 to 5 green onions
1/2 cup heavy cream
salt and freshly round pepper
While pasta is cooking, heat oil in a large skillet. Sauté pepperoni 3 to 4 minutes. Remove and set aside. Add sliced mushrooms and onions to skillet. Sauté 4 to 5 minutes over medium heat until mushrooms are limp and onions are soft. Add cream, pepperoni, salt and pepper; heat through. Combine with hot, well-drained pasta and serve immediately on warm plates.
3 to 4 servings.
