PASTA WITH MUSHROOMS & SHRIMP Serve: 8 1 pound - Penne Rigate or Farfalle (bow tie pasa) 1/4 cup - margarine 1 large - garlic clove, minced 2 (7-ounce) cans sliced muhrooms, drained 3/4 pound - shrimp, medium, shelled and deveined 1/2 cup - chicken broth 1/2 cup - Parmesan cheese, grated Cook pasta as directed. Meanwhile in a large skillet, melt margarine over medium het. Add garlic, aute 1 minute or until softened. Increase heat tomedium-high, add mushrooms and saute for 5 minutes or until tender. Add shrimp, saute for 3 minutes or until cooked through. Stir in chicken broth. Bring to a boil; reduce heat and simmer 1 minutes. Drain pasta; place in serving bowl and toss with cheese. Add mushroom-shrimp sauce; toss. Garnish with parsley if desired. Serve immediately.
