Eggplant Bake
4oz. bow tie pasta, cooked 1 eggplant, diced 1 clove garlic, minced 1/4 cup olive oil 1 1/2 cups shredded Mozzarella cheese, divided 1 cup green onion 1/2 cup grated Parmesan cheese 1 10oz. can diced tomatoes
Preheat oven to 350 degrees. In a large skillet, cook eggplant and garlic in olive oil, over med. heat until eggplant is tender. Toss eggplant with cooked pasta, 1 cup mozzarella cheese, green onion, Parmesan cheese and tomatoes. Place in a 9" square baking dish. Top with remaining 1/2 cup mozzarella cheese. Bake for 15 minutes or until heated through.
