2 T. bacon grease 1 lg. sweet onion, sliced thin 1 lg. bell pepper, sliced thin 1/4 t. garlic powder (or 1 garlic clove, minced) 2 lbs. small red potatoes, washed, not peeled, sliced 1/4 in. thick 1 link polish sausage, cubed 3 T. water 1/2 t. black pepper 8 oz. medium Cheddar cheese, shredded salt (optional)
Heat bacon grease in large skillet. Sauté onion and bell pepper with garlic. When tender, move aside in the skillet and add potatoes. Using med. high heat, turn potatoes until browned; add sausage, water, and black pepper. Cover, reduce heat, and simmer until potatoes are soft.
Remove lid and cook out moisture. Spread cheese on top, replace lid, and turn off heat. Let stand until cheese has melted. Makes 8-10 servings.
