Serves 6
Ingredients; 600 gram of prime rib (entrecote) 1 tablespoon sugar 2 tablespoons Mirin, this is rice wine, if you cant get that you can use a dry sherry 3 tablespoons soybean oil cooked rice keep warm lettuce, leaves taken of washed and dried
For the sauce 5 tablespoons of soy sauce (Kikkoman) 1 1/2 tablespoons sugar 2 finely shopped cloves of garlic 2 tablespoons of finely sliced spring unions. 1/2 tablespoon roasted sesame seed pepper 2 tablespoons sesame oil
preparation: Cut the meat in really thin strips they need to cook very quickly. If you have trouble cutting the thin strips put the meat in the freezer until lightly frozen. Mix the strips of meat with the mirin and sugar and marinate for 30 minutes. Mix all the ingredients for the sauce, after the 30 minutes add this to the meat and marinate for 3 hours. Heat one tablespoon of soybean oil preferably in a wok and fry 1/3 of the meat and sauce in about 5-10 minutes, keep the meat warm and fry the rest of the meat in the same way. Do not fry to much meat at the same time you will get to much moisture and the meat will boil in its own fluids, and you want to fry it.
To eat: Take a lettuce leaf put some rice on it and some of the meat, fold the leaf and eat.
