Quick Beef Bake Prep: 15 min, Cook: 30 min. 1 lb. lean ground beef or turkey 1/2 cup onion, chopped 2 cans lowfat condensed cream of mushroom soup 2-1/2 cups skim milk 1 tsp. garlic salt 2 cups frozen mixed vegetables 2 cups reduced fat buttermilk baking mix 1 Tbs. parsley, snipped Preheat oven to 450°F. Heat a heavy nonstick skillet over medium high heat. Cook ground beef and onion until beef is brown. Drain. Spoon into an ungreased 13x9 inch baking dish. Stir in soup, 1 cup milk, garlic salt and vegetables. Combine baking mix and remaining milk in a bowl until blended. Pour over beef mixture. Bake 27-30 minutes or until crust is light golden brown. Sprinkle with parsley if desired.
