This is a wonderful side dish to serve with meat, fish or fowl.
Couscous Delight
2-3 tablespoons honey 1/8 teaspoon salt 3 cups boiling water 1 pound couscous 1/3 cup pine nuts 1/3 cup golden yellow raisins 1/3 cup dried cranberries 2 tablespoons extra virgin olive oil
In a four quart mixing bowl, blend together the honey, salt, and boiling water. Pour over the couscous and stir to combine. Add the pine nuts, raisins, and dried cranberries and stir to combine. Let it stand for 15 minutes. Stir in the extra virgin olive oil. Before serving, fluff up with a fork. Makes 6 servings.
