Fried Plantain
Plantain (yellow or green) Cooking oil Salt (optional)
Directions
1. Fill a large skillet a third full with oil and heat over medium-high heat 2. Sauté half inch plantain slices until they begin to brown 3. Remove the plantain and drain on paper towels 4. For green plantain, use a plantain press or the bottom of a coffee cup to smash the plantains 5. Press to half of its size 6. Sauté once again until golden brown 7. Remove and use paper towels to absorb excess oil. Sprinkle salt on green plantain
