MIXED SAUTÉED VEGETABLES
4 tsp butter 2 onions, sliced 1 clove garlic, crushed 4 tomatoes, quartered 1 green pepper, sliced 2 stalks celery, chopped 2½ Tbs chopped parsley Salt and pepper
Melt butter in a frying pan. Sauté onion and garlic until onion is transparent. Add tomatoes, green pepper, celery, and parsley. Cover and simmer until vegetables are tender but not soft. Season to taste with salt and pepper.
Serves 4.
