IOWA Corn Casserole
1 lb. bacon, diced 2 c. bread crumbs 1/4 c. minced onion 2 16 1/2oz. can cream style corn
Preheat oven to 350. Need 1 quart baking dish. In a skillet, fry the bacon until lightly browned. Remove and set aside. Pour 1/8 to 1/4 c. of the bacon drippings over bread crumbs and set aside. Saute onion and green pepper in 2 tbsp. of remaining drippings, until tender. Stir in corn and bacon. Spoon into baking dish and sprinkle with crumbs. Bake for 20 - 25 minutes or until bubbly and heated through. Makes 6 - 8 servings.
