For 4 Servings:
1-1/2 lbs. asparagus, tough ends discarded 2 cloves garlic, minced 3 Tbs. rice or red wine vinegar 2 Tbs. virgin olive oil 1/4 cup lemon juice 1/4 tsp. dry mustard 3/4 tsp. lemon zest 1/8 tsp. white pepper 3 Tbs. chopped pimento Place asparagus in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until asparagus is tender. Rinse under cold water. Drain thoroughly and set aside. Combine next 7 ingredients and salt to taste in a jar with a tight-fitting lid. Shake vigorously. Arrange asparagus spears in a shallow dish. Pour dressing over asparagus and toss gently. Top with pimento.
