Watermelon-Cranberry Chutney.
1 1/2 cups cider vinegar 1 cup light brown sugar 1 package (8-oz.) dried cranberries 1 teaspoon salt 1 tablespoon ground ginger 1 tablespoon minced garlic 2 small jalapenos, seeded, minced 1 cup pinenuts 4 cups small watermelon cubes
Directions: In a large saucepan, combine ingredients except pinenuts and watermelon. Bring to a boil, lower heat to low and simmer, stirring often to prevent sticking, 45 minutes, or till mixture is very thick. Remove from heat and cool. Gently fold in pinenuts and watermelon cubes. Cover and refrigerate.
