Easy Creamed Spinach
1 pound fresh spinach - washed and drained, but not dried 2 tablespoons unsalted butter 1 1/2 tablespoons all-purpose flour 1/4 cup milk 1 teaspoon sugar 1/4 teaspoon salt- or to taste 1/4 teaspoon white pepper - or to taste
Directions: Cook the spinach in a large covered pan over medium heat until thoroughly wilted, about 5 minutes. Let cool and chop fine; set aside. Melt the butter in a saucepan over low heat. Gradually add the flour, whisking constantly. Cook until smooth, about 1-2 minutes. Slowly whisk in the milk. Cook until thickened, about 3-5 minutes. Add reserved spinach, sugar, salt, and white pepper. Mix well.
