I LOVE cucumbers in any types of dressing like the following one. Really helps those of us who follow low carb eating too, to have dishes like this! I just use splenda instead of sugar. Cucumbers with sweet/sour dressing 1/3 cup mayonaise 1/3 cup sugar 3 teaspoon vinegar milk salt and pepper * Dry dill to personal taste Directions: Mix the sugar and mayo - add vinegar and blend together well. Add milk to get the desired texture - make a little runny but not watery - then salt, pepper, and add dill to taste. Peel two or three cucumbers, then score the length of them with the tines of the fork. Slice about 1/8 inch thick- (I use my vegetable wavy cutter) and pour this dressing over them and mix well. Let sit for a few hours and enjoy. This is one of those dishes that tastes better after a few hours, or the next day! Always My Best, Baking Bud
