CARROT FETTUCCINE 2 lb. bag of carrots 3 tbps. olive oil 2 tbps. butter ½ cup frozen peas, defrosted 3 tbps. bread crumbs Salt and pepper to taste Parmesan cheese, as much as you want Peel and clean carrots. With peeler, shave long strands of carrots (will resemble fettuccine). In a large frying pan, heat oil and butter until melted. Add carrots and sauté over medium to high heat until tender, yet firm, about 8-10 minutes. Add peas, salt and pepper and parmesan cheese, and toss. Sprinkle with bread crumbs and serve hot.
