Prep Time: 10 minutes Cooking Time: 15 minutes Ingredients 1 tablespoon olive oil 1/2 cup chopped red onion 1/2 cup chopped celery 2 10-ounce boxes frozen peas 1/4 cup chopped celery leaves 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper Directions: Heat oil in a large skillet over medium heat. Add onion and cook until softened, 5 minutes. Stir in celery; cook until just tender, 3 minutes. Increase heat; add peas. Cook until peas are heated through, 5 to 7 minutes more. Remove skillet from heat; stir in celery leaves and salt and pepper. Makes 4 cups (eight, 1/2-cup servings). Make-Ahead Tip: Transfer vegetables to a microwaveproof bowl. Cover and refrigerate up to 2 hours. To reheat, microwave on High, 1 to 2 minutes. Nutritional facts per serving
