Green Tomato Casserole
8 c. green tomatoes, sliced
(4 large or 3 lbs.)
2 onions, sliced
2 garlic cloves, sliced
3 tbsp. oil
1 unbaked pie shell, frozen
(if homemade is used, freeze first before filling)
3 tbsp. parsley, chopped
2 tbsp. flour
2 tsp. salt
1/4 tsp. ground black pepper
1 c. cheddar cheese, shredded
In large skillet heat oil, add onions and garlic. Sauté until tender, about 3-5 minutes. Add tomatoes. Cook over medium-high heat until soft, about 15 minutes, stirring occasionally. Sprinkle on parsley, flour, salt and black pepper and stir until well mixed. Cool. Spoon into frozen, unbaked pie shell. Sprinkle with cheese. Bake at 375 for 20 minutes or until browned. Cool 5 minutes before serving.

Fried Green Tomatoes
4 large green tomatoes
1 1/3 cup milk (divided use)
1 3/4 cups all-purpose flour
1/4 cup cornmeal
4 teaspoons baking powder
1/2 teaspoon salt
4 large eggs
2 teaspoons sugar
1 tablespoon Old Bay seasoning (optional)
1/2 cup vegetable (cooking) oil
Cut the stem hard core out of the tomato and thinly slice off the opposite end. Cut the tomato cross-grain in 1/4-inch slices. Place tomato slices in a large shallow dish and pour on 1 cup of the milk. Let stand for 10 to 20 minutes.
In a separate mixing bowl, mix together the flour, cornmeal, baking powder, salt and Old Bay seasoning. Beat the eggs vigorously and add to the flour mixture along with the sugar and 1/3 cup of milk. Stir to blend
into a smooth batter.
Heat the oil in a deep frying pan until very hot (365 to 370 degrees on a candy thermometer). Remove tomato slices from the milk a few at a time, dip into the batter and fry in the hot oil until golden brown on both sides. Cook for about 1minute then turn and cook for another minute. Remove cooked tomato slices
from the oil and drain on paper towels. The cooked tomato slices may be kept warm for a few minutes until ready to serve by placing on a serving platter in the oven preheated to 200 degrees with the door partially open.

4 c Sugar
6 oz Pkg. raspberry Jello
Preparation : Boil tomatoes and sugar together for 15 minutes. Remove from heat. Add Jello and stir well. Put into blender. Blend well. Pour into jars and seal.
