This dish is soooo easy and can be eaten as a meal in itself (maybe with a salad) or as a side-dish
Ingredients: 1 or 2 eggplants (smaller ones are better tasting) Eggs Bread crumbs Oil for frying (or you can bake instead) Tomato sauce (any kind you like) Parmesan and mozzarella cheese
Take the skins off eggplants and cut about 1/2 inch thick Dip in egg - then breadcrumbs Fry till golden brown in small amount of oil or you can bake at 350 till brown
Put some of the tomato sauce in the bottom of a baking dish - then place and layer of the eggplant. Sprinkle with parmesan cheese and mozzarella cheese. Continue layering the eggplant, sauce and cheese. Bake in oven at 350 degrees until cheese melts.
