1 pound yellow squash 1 teaspoon sugar 1/2 cup low fat mayonnaise 1/2 cup chopped onion 1 egg 1/2 cup low fat grated cheese 1/2 cup chopped pimento 1 teaspoon salt 1/2 stick low fat margarine 1/2 cup bread crumbs
Directions: Cook squash until tender. Add margarine and mash. Mix sugar, egg and mayonnaise. Mix salt, onion, and pimento with this mixture and add to squash. Pour mixture into buttered dish. Top with bread crumbs and cheese and dot with butter. Bake at 350 degrees for 35 to 40 minutes.
