Prep: 10 min, Cook: 35 min.
For 4 Servings:
2-3/4 Tbs. peanut oil 1/3 cup olive oil 2 large onions, sliced 4 medium potatoes, sliced 1/4 lb. peanuts 1 Tbs. plus 1 tsp. fresh oregano, chopped, optional Preheat oven to 400°F. Heat half the peanut and olive oil in a baking dish, add onion. Cook, stirring, until onions are well browned. Remove from dish. Heat remaining oil in same dish, add potatoes. Cook, stirring, until potatoes are well browned. Add nuts and onions, mix gently. Bake about 15 minutes or until heated through. Top with oregano if desired before serving.
