For 4 Servings:
1-1/4 lbs. turnip, peeled and shredded 1/4 tsp. baking soda 1 Tbs unsalted butter or margarine 1/4 cup evaporated skim milk 1/8 tsp. salt optional Place turnips in a heavy saucepan with just enough water to cover. Bring to a boil over high heat. Remove from heat and quickly stir in baking soda to remove bitterness. Drain turnips. Rinse under cold water and drain again. Return to saucepan. Add remaining ingredients and pepper to taste. Simmer over medium heat 3-4 minutes.
