1 Large Onion, chopped 2 lb. potatoes, cut into chunks 1 T. olive or vegetable oil 1/2 tsp Onion Salt Nonstick cooking spray
Preheat oven to 425°F. Use non-stick spray to lightly coat the baking pan. Place potatoes and chopped onion in baking pan and drizzle olive oil over them, stirring to coat them evenly. Spread them out evenly in a single layer. Sprinkle evenly with onion salt. Bake, stirring occasionally, 40 minutes or until potatoes are tender and golden brown. Garnish with chopped parsley, if desired.
