Yield: 4 servings
2 tb olive oil 2 lb small new potatoes; unpeeled - and -- quartered 1 tb minced garlic 1 tb minced shallot 1 ts chopped fresh thyme 1 ts minced fresh rosemary 1/8 ts ground nutmeg 1/4 c balsamic vinegar 1/2 ts salt 1/4 ts pepper
Heat oil in a large skillet over medium-high heat. Add potato and next 5 ingredients; cook, stirring constantly, until thoroughly heated. Place potato mixture in an ungreased 15 x 10 x 1-inch jellyroll pan. Bake, uncovered, at 400ยบ for 25 minutes or just until potato is tender, stirring occasionally. Add vinegar and toss well. Sprinkle with salt and pepper. Bake, uncovered, 7 additional minutes. Serve immediately.
