Yield: 4 servings
1/3 c pesto sauce 1/2 ts salt 1/4 ts black pepper 6 md baking potatoes; cut in 1" -chunks; peeled or unpeeled
Preheat the oven to 425F. In a large bowl, combine the pesto sauce, salt, and pepper; mix well. Add the potatoes and toss until well coated. Place the potatoes on a large rimmed baking sheet. Bake for 35 to 40 minutes, or until crisp and brown on the outside and tender on the inside, turning halfway through the baking.
NOTES : Why not sprinkle these with grated Parmesan cheese just before serving for extra cheesy flavor?
