4 lg baked potatoes 1 c margarine; at room -temperature 1 ts sugar 1/4 c chopped chives 1/2 ts dill weed 1/2 ts garlic powder 1 ds nutmeg 1 10 oz package frozen chopped - spinach; cooked and drained 2 tb sour cream or yogurt 1/4 c grated Parmesan cheese
Preheat oven to 350 degrees. Halve potatoes; scoop out flesh.
In large bowl, combine potato pulp, margarine, sugar, chives, dill weed, garlic powder, nutmeg, spinach and sour cream. Combine thoroughly. Fill potato skins. Arrange in baking dish. Bake, uncovered, for 30 minutes. Sprinkle cheese on top. Broil at 500 degrees for 3 minutes, or until tops are golden brown.
Serves 8.
