For 4 Servings:
1 tsp. olive oil 1/2 cup onion, finely chopped 1/4 cup celery, finely chopped 3 plum tomatoes, seeded and diced 1 tsp. tarragon, crumbled, or 1-1/2 tsp. fresh, minced tsp. salt, to taste tsp. pepper, to taste 1 Tbs. lemon juice Heat oil in a heavy nonstick skillet over high heat. Sauté onion and celery 1 minute. Stir in tomato and cook another 2 minutes, or until hot. Remove from heat, stir in remaining ingredients. Serve with fish.
