Scallion Potatoes
Makes: 8 servings
Ingredients:
2 pounds red potatoes, cubed 1 tablespoon non/lowfat margarine 1/2 cup green onion, chopped 3/4 cup skim milk 1 tablespoon cornstarch 1-1/2 tablespoons dill Directions:
Steam potatoes for 12-15 minutes. Set aside. Melt margarine in a nonstick skillet over medium heat and sauté green onions for 3-4 minutes. Combine milk and cornstarch in a container with a lid, shaking until mixed well. Stir into green onions. Add dill and simmer until slightly thickened. Coat potatoes with sauce.
