Wash and remove the heart from a head of lettuce.
Wash and hull 1 cup green (English) peas. Season them with salt, pepper and a pinch of sugar.
Fill the head of lettuce with the peas, tie up the leaves and place the head in a small quantity of boiling water. Steam the peas, covered, until tender, about 30 minutes. Serve them with melted butter or cream. The lettuce leaves may be chopped and served with the peas. Makes 2 to 3 servings.
