Cauliflower Casserole
1 medium head cauliflower, broken into florets 1 cup sour cream 1 cup shredded cheddar cheese 1/2 cup crushed cornflakes 1/4 cup chopped green pepper 1/4 cup chopped sweet red pepper 1 tsp salt 1/4 cup gratedparmesan cheese paprika
Place cauliflower and a small amount of water in a saucepan; cover and cook for 5 minutes or until crisp-tender. Drain. Combine with sour cream, cheddar cheese, cornflakes, peppers and salt. Transfer to a greased 2 QT baking dish. Sprinkle with Parmesan cheese and paprika. Bake uncovered at 325*F for 30 - 35 minutes. Serves 6 to 8.
