Red Cabbage
3 strips bacon 1 1/2 lbs. red cabbage 1 medium onion, finely chopped 7 bay leaves 2 TBS mixed pickling spice 3 TBS honey or sugar juice of 2 lemons or 1/4 cup vinegar 1/2 tsp salt 1/8 tsp pepper
Fry bacon until crisp. Remove from pan and break into small pieces. shred cabbage leaves in 1/4 inch wide strips. Add to bacon grease along with crumbled bacon. Cover tightly and simmer for 20 minutes. Add onion, bay leaves and pickling spice, tied in cheesecloth. Stir in honey, lemon juice or vinegar. cover and simmer slowly for about 1 1/2 hours. Add salt and pepper and steam 1/2 hour. Serves 4.
